Cherry Chocolate Cupcakes

I have been making these cupcakes for a couple years now and it seems like I tinker with the recipie everytime I make them but I think I’m finally done. Last night I made them for my father-in-laws birthday and they were prettyperfect. I even found a way to simplify the order so you don’t have to sift this and cream that (just takes too dang long).

  • 1/3c. Dutch Process Cocoa Powder
  • 2tbsp. butter flavored Crisco
  • 1c. flour
  • 1/2c. unsalted butter
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1/4 tsp. chayenne pepper
  • 1/4 tsp. ground cinammon
  • 1 1/4c. sugar
  • 1/2c. melted unsalted butter

Put all of the above in a blender bowl and stir until it looks moist.



  • 1 tsp. vanilla
  • 1/2 c. sour cream
  • 1c. cherry peices

Blend the above into the batter on med. for 2 min.

  • 2 eggs

Incorporate eggs one at a time. Put into cupcake papers and fill until about 1/8in. from the top. Bake at 350* for 20min.

The frosting is like a liquid marshmallow…Mmmmm.

  • 1 3/4c. sugar
  • 1/2c. water
  • 1/4tsp. cream of tartar
  • 3 egg whites

Put in heat proof bowl and mix until foamy (about a min.) Then put on top of a pot of simmering water and mix on med. for 12 min. or until 160*.

  • 1 tsp. vanilla
  • 1/2 tsp. almond


Put back on stand and mix 2 min. until thick and cool. Put in a bag and pipe onto cool cupcakes. When your done put them in the fridge for a couple of min. It will help the chocolate set faster.

  • 10oz. bittersweet chocolate
  • 1tbsp. veg oil

Melt them in the microwave for a min, then stir and go an additional 30 sec. until very liquid.  Spoon over the top, working from the middle out. Put in the fridge for about 15 min. until the chocolate forms a hard shell. Enjoy!

    Thanks Ami! That’s a new thought. I sure wish we could see you guys when we go to Oklahoma this month.
